Plain and Simple Coleslaw

1 head of cabbage, sliced as thin as possible
2 carrots, shredded
1 t. salt
2 T Olive Oil
2 T. Vinegar - Apple cider goes best with green cabbage, red wine or balsamic with red cabbage

Combine the cabbage and carrots with salt in a large bowl. Toss to incorporate the salt and let stand for 10-15 minutes to release the water from the cabbage. Add the oil and vinegar and toss to thoroughly coat everything. That's it! You could add a teaspoon of dijon mustard if you like, but either way you're in for a delicious salad that keeps getting better in the fridge.

Kohlrabi Slaw

4 medium kohlrabis, peeled and shredded
1 small carrot, shredded
1/2 C mayo
1/4 C sour cream
1 T sugar
2 t lemon juice
2 t dijon mustard
1/2 t celery seed
1/4 t salt
1/4 t pepper 

Toss all together in a large bowl. Best if left to "stew" overnight to blend flavors.

Salted Cabbage Slaw

Cabbage
Salt
Olive oil
Vinegar (we usually use apple cider) or lime juice

Slice cabbage into ribbons. Salt generously and toss with your hands. Let sit for at least 10 minutes. Mix in some olive oil and cider vinegar and top with fresh ground pepper. Eat along side of almost everything! 

Kale Slaw

So easy! So delicious! 

1 bunch of raw kale- de-stemmed
Olive oil
Lemon juice- juice of 2 lemons
Garlic 

Salt
Pepper 

De-stem kale, chop finely and add 2 tsp. of salt in a bowl. Let sit for a few minutes. Chop up garlic to your liking. Juice your lemons. Add garlic, lemon juice, 2-3 T of olive oil to kale and mix. Let it sit for 5-10 minutes- garnish with fresh ground pepper and enjoy!

Napa Cabbage Slaw

1/4 cup rice vinegar (not seasoned)
2 teaspoons sugar
1 teaspoon grated peeled ginger
2 tablespoons toasted sesame or vegetable oil
1 fresh serrano chile, finely chopped, with seeds
1 small head Napa cabbage (1 1/2 pounds), cored and cut crosswise into very narrow slices
1 bunch scallions, sliced 1/2 cup coarsely chopped cilantro

Whisk together vinegar, sugar, ginger, oil, chile, and 1/2 teaspoon salt. Add remaining ingredients and toss well. Let stand, tossing occasionally, 10 minutes.
